Preparation method

Peel the pears, cut them into eighths, and remove the cores. Place them in a pot, drizzle with lemon juice, and pour in 700 ml of water.

Add the sugar, cloves, cinnamon, and star anise, then bring to a boil.

Reduce the heat to low and simmer for about 20 minutes, until the pears are tender but not falling apart.

Chef's tip

The pears should be soft, but not overcooked.

Only use the yellow zest of the lemon if adding zest, as the white pith is bitter.

Lemon juice helps preserve the light color of the pears, preventing them from browning.
