Preparation method

Preheat the oven to 180°C.

Place the ingredients for the dough into a food processor bowl and mix until a firm dough forms. Line the cake tin with baking paper and press the dough evenly into it, then set aside.

Whip the cream until stiff. Mix the remaining ingredients for the filling in a separate bowl, then gradually fold in the whipped cream with a spatula. Add the filling evenly to the dough-lined cake tin.

Chef's tip

Only grate the yellow part of the lemon, as the white part is bitter.
