INGREDIENTS FOR THE DOUGH
- 150 g plain flour
- 100 g soft butter
- 50 g powdered sugar
- 20 g vanilla sugar
- 1 egg
- Finely grated lemon zest

- 500 g full-fat soft cottage cheese
- 180 g cream (min. 31%)
- 40 g vanilla pudding powder
- 20 g vanilla sugar
- 2 eggs
- Powdered sugar for decoration
- Finely grated lemon zest
- 140 g sugar
WHAT ELSE YOU'LL NEED

PREPARATION
- 1Preheat the oven to 180°C.
- 2Place the ingredients for the dough into a food processor bowl and mix until a firm dough forms. Line the cake tin with baking paper and press the dough evenly into it, then set aside.
- 3Whip the cream until stiff. Mix the remaining ingredients for the filling in a separate bowl, then gradually fold in the whipped cream with a spatula. Add the filling evenly to the dough-lined cake tin.
- 4Place the cake tin in the preheated oven and bake the cheesecake for 45 minutes. The top of the cake should be golden brown and springy when pressed. Let it cool, then serve dusted with powdered sugar.
Tip
Only grate the yellow part of the lemon, as the white part is bitter.
