Ingredients

  • 280 g butter
  • 280 g powdered sugar
  • 200 g ground walnuts
  • 6 pcs egg whites
  • 140 g plain flour
  • 4 g vanilla sugar (for the glaze)
  • 2 tbsp rum (for the glaze)

Steps

  • 1
Preheat the oven to 160 °C. Line a baking tray with baking paper.
  • 2
Cream the butter with the sugar until fluffy. Add the plain flour and finely ground walnuts. Beat the egg whites until stiff peaks form, then gently fold them into the batter in several additions.
  • 3
Spread the batter evenly in the baking paper-lined tray, making sure it reaches the edges. Place the tray in the preheated oven and bake for 30–35 minutes.
  • 4
Meanwhile, prepare the glaze: beat the egg yolks with the powdered sugar, vanilla sugar, and rum until light and creamy, forming a thick cream.
  • 5
Remove the tray from the oven, pour the glaze over the still warm batter, and spread it evenly. Let it cool completely. The next day, cut into slices of approximately 5×3 cm.

Tip: You can also use a mixture of walnuts and hazelnuts, but walnuts should dominate for a more distinctive flavor.
