Preparation and Raspberry Sauce
Place the frozen raspberries in a small saucepan and heat over low heat until completely softened (approx. 5 minutes). Remove from heat, purée with an immersion blender, then strain through a fine sieve to remove the seeds. Let it cool completely.
Brew a batch of strong coffee (e.g., espresso or filter coffee) and let it cool as well.
Preparing the Cream
Prepare an approx. 20x10 cm dish. Separate the eggs. Beat the yolks with sugar until pale, then add the mascarpone and mix until smooth. (If you are concerned about raw eggs, you can beat the yolks over a double boiler). Grind 30 g of freeze-dried raspberries into a powder, sift it into the mascarpone mixture, and mix until you get a beautiful pink cream.
Chef's tip
For the best results, use good quality Italian ladyfingers (Savoiardi), which absorb the coffee better without becoming soggy.
