Ingredients

  • 400 g all-purpose flour
  • 300 g plum jam
  • 200 g butter (plus for greasing the tray)
  • 200 g granulated sugar
  • 15 g cocoa powder
  • 12 g baking powder
  • 5 g gingerbread spice mix
  • 250 ml lukewarm milk
  • 1 egg
  • fine semolina flour for dusting the tray

Steps

    Preheat the oven to 180 °C. Grease a baking tray with butter and dust with fine semolina flour.

    Place all ingredients except the jam into a food processor and mix at medium speed for 3-4 minutes. Pour the batter into the prepared baking tray and smooth the top. Fill a piping bag with the jam and draw a diagonal lattice pattern on top of the raw batter.

    Place the tray in the preheated oven and bake for 20 minutes. Let the finished cake cool in the tray, then cut into slices.

    Tip: You can also add half a teaspoon of ground cinnamon to the batter. Instead of plum jam, you can use any other jam with a more distinct, tart flavour. The cake is ready when a toothpick inserted into the centre comes out clean.
