- 140 g cane sugar
- 205 g fine wheat flour
- 40 g cocoa powder
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 1 pinch salt
- 50 g powdered sugar for coating
Mix the melted butter with the eggs and cane sugar. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Add the dry ingredients to the wet mixture and work into a thick dough. Cover with foil and chill in the refrigerator for at least one hour.
Preheat the oven to 180 °C and line a baking tray with baking paper. Form small balls from the chilled dough using a teaspoon, then thoroughly roll them in powdered sugar. It is important that a thick layer of sugar covers the balls for a beautiful cracked effect.
Place the balls on the baking tray spaced apart, then bake for about 10 minutes. The cookies should remain soft when you take them out – they will firm up as they cool, becoming crispy on the outside and creamy on the inside. Leave them on the tray for 3 minutes, then cool completely on a wire rack.

Resting the dough is crucial: if the dough is not cold enough, the balls will spread too much during baking, and the cracks will not be as beautiful.
