Preparation method
Preheat the oven to 180 °C (top and bottom heat).
Separate the egg. Place the yolk in a bowl with the flour, diced cold butter, sugar, vanilla extract, finely grated lemon zest, and salt. Crumble the dough with your fingers, then add 25 ml of cold water and quickly knead it together. Form a ball, wrap it in cling film, and let it rest in the refrigerator for at least 30 minutes.
Wash the apples, cut them in half, remove the core, and slice them into thicker wedges.
