  • 20 dag rice flour
  • 15 dag gluten-free oat flour
  • 1 pack baking powder
  • 5 pieces eggs
  • 20 dag lactose-free butter
  • 1 teaspoon cinnamon
  • Half teaspoon cloves
  • 1 vanilla pod
  • Zest of 1 orange
  • 20 dag powdered sugar

    Mix the two types of flour with the baking powder.

    Separate the eggs.

    Using a stand mixer, cream the butter with the egg yolks, cinnamon, powdered sugar, vanilla, cloves, and orange zest until fluffy. Then add half of the flour and work it into the buttery cream. Once done, add the other half of the flour.

    Add a pinch of salt to the egg whites and beat them into a stiff foam. Gently fold half of this into the flour mixture with a wooden spoon, then add the other half.

    Grease and flour the Gugelhupf mold and pour in the batter. You can spread it evenly with a wooden spoon.

    Bake in a preheated oven at 170 degrees Celsius for 50-55 minutes.

    Once the Gugelhupf is done, turn it out of the mold onto a wire rack, and when it has cooled, sprinkle with cinnamon powdered sugar.
