Preparation method
Peel the apples, remove the core, and cut them into approximately 1.5 cm cubes.
Pour 500 ml of water into a large saucepan, add 150 g of sugar, and heat over medium heat to approximately 38–40 °C. Take out 150 ml, mix it with the pudding powder until smooth, then pour it back into the saucepan. Bring to a boil while stirring constantly, then reduce the heat.
Add the apple cubes, vanilla sugar, and cinnamon. Cook over low heat for about 10 minutes. Add the lemon juice, mix, and continue cooking until the apples soften. If the mixture is too thick, add a little water.
Chef's tip
For preparation, you will need a 28 cm diameter cake tin and a spatula.
