Preparing the dough

In a food processor or by hand using two forks, mix the cold butter, flour, powdered sugar, and salt into fine crumbs.

Add the ice-cold water and egg yolk, then quickly work into a smooth, slightly sticky dough – do not overwork it.

Divide the dough into 5 equal portions (about 60 g each) and refrigerate for at least 45 minutes.
