Ingredients
- 4 pcs large sweet potatoes
- 200 g small savoy cabbage
- 150 g feta cheese
- 30 ml olive oil
- 1 g salt
- 1 g freshly ground pepper
Steps
- 1Wash the sweet potatoes thoroughly in warm water and dry them. Pierce them in several places with a fork, then place them on a baking tray lined with baking paper. Bake until soft at 200°C for about 45 minutes.
- 2Meanwhile, finely chop the cabbage and crumble the feta with a fork. Place them in a bowl and mix with 2 tablespoons of olive oil.
- 3Remove the baked sweet potatoes from the oven, then cut off the top of each and scoop out the flesh. Add the scooped-out flesh to the feta mixture, mix again, then season with salt and pepper.
- 4Fill the hollowed-out potatoes with this mixture, then bake again for about 10 minutes.
