Ingredients
- 250 g fine wheat flour
- 200 g Bergkäse, Emmental or Raclette cheese
- 5 pcs eggs
- 40 g butter
- 1 g ground nutmeg
- 80 g onion
- 1 g pepper
- 5 g salt
- 10 g chives
Steps
- 1Bring 4 litres of water to a boil and add 2 tablespoons of salt.
- 2Place all the ingredients for the dough into the mixing bowl of a food processor and knead into an elastic dough using the whisk attachment.
- 3Using a hand dumpling maker, add the nokedli dough into the boiling water one by one, cooking the nokedli for 2-2 minutes.
- 4Remove the nokedli from the water with a slotted spoon and place them in a bowl.
- 5Finely chop the onion, and coarsely grate the cheese.
- 6Heat the butter in a pan over high heat and sauté the onion until golden brown.
- 7Add the nokedli and sauté until golden, stirring occasionally, then remove from heat.
- 8Stir in the grated cheese and add the chopped onion, then serve immediately.
- 9For shaping the nokedli, you will need a hand dumpling maker, and for frying, a large non-stick pan.
