INGREDIENTS FOR ONION CHUTNEY

  • A little olive oil
  • 2 large red onions
  • One tablespoon cane sugar
  • One teaspoon honey
  • A pinch of salt
  • A pinch of pepper
  • One sprig of thyme
  • A pinch of ground chili pepper

INGREDIENTS FOR HERB SAUCE

  • 2 tablespoons yogurt
  • 150 g cream cheese
  • Half a clove of garlic
  • A pinch of salt
  • A pinch of pepper

INGREDIENTS FOR ASSEMBLING THE CHEESEBURGER

  • 2 slices halloumi cheese
  • A handful of finely chopped fresh herbs
  • 2 hamburger buns
  • 1 tomato
  • 2 iceberg lettuce leaves
  • A little olive oil
  • 2 pickled cucumbers

PREPARATION OF ONION CHUTNEY

    Peel, halve, and thinly slice the onion.

    Heat olive oil in a high-sided pan and sauté the onion until translucent. Add 1 tablespoon of cane sugar, caramelize slightly, then add the cognac and wait until the alcohol evaporates.

    Add the thyme and ground chili pepper and cook over low heat until half of the liquid evaporates. Finally, stir in the honey and season with salt to taste.

    Mix the ingredients for the sauce and season to taste, then refrigerate.

PREPARATION OF THE CHEESEBURGER

    Brush the cheese with olive oil and sprinkle with dried thyme. Place it on the grill and cook until lightly golden.

    Halve the hamburger bun, brush with olive oil, and grill briefly.

    Spread the bun with the sauce, add a lettuce leaf, a slice of cheese, a slice of tomato, a few slices of pickled cucumber, and finally the onion chutney. Spread the other half of the bun with sauce as well and cover the cheeseburger with it.
Tip
The onion chutney can be eaten cold or warm. It keeps in the refrigerator for about 3 days. Serve with grilled vegetables, grilled asparagus, or a fresh green salad as a side dish.
