PREPARATION OF ONION CHUTNEY
Peel, halve, and thinly slice the onion.
Heat olive oil in a high-sided pan and sauté the onion until translucent. Add 1 tablespoon of cane sugar, caramelize slightly, then add the cognac and wait until the alcohol evaporates.
Add the thyme and ground chili pepper and cook over low heat until half of the liquid evaporates. Finally, stir in the honey and season with salt to taste.
Chef's tip
The onion chutney can be eaten cold or warm. It keeps in the refrigerator for about 3 days. Serve with grilled vegetables, grilled asparagus, or a fresh green salad as a side dish.
