Take 100 ml from the lukewarm milk, add 1 teaspoon of granulated sugar, and crumble in the fresh yeast. Allow it to bloom for 10 minutes in a warm place.

Sift the plain wheat flour into a large bowl, mix in a pinch of salt, the vanilla sugar, and the remaining granulated sugar. Make a well in the center, pour in the bloomed yeast milk, the remaining lukewarm milk, the egg, and the softened butter.

Knead into a shiny, smooth, elastic dough in 8–10 minutes using a stand mixer or by hand. Cover and let it rise in a warm place until doubled in size, about 45–50 minutes.

Chef's tip

It is worth arranging the plums slightly at an angle and closely packed together on the dough, so that the delicious fruit juice absorbs directly into the yeast dough while baking.

If the plums are very juicy, you can sprinkle 1 tablespoon of breadcrumbs or ground walnuts over the dough before placing the fruit on top.
