Preparation method
Cut the dragon fruit in half lengthwise and scoop out the flesh with a spoon. Place it in a blender with the coconut water, maple syrup, and mint leaves, then blend until completely smooth.
Fill the ice cream molds halfway with the mixture, sprinkle in finely crushed freeze-dried fruit pieces, then pour in the remaining mixture. Sprinkle the top again with freeze-dried fruit.
Place in the freezer for 5-6 hours, but it's best to freeze it overnight.
