First, pour 50 ml of water into a small bowl, sprinkle in the gelatin, and let it swell for a few minutes.
Meanwhile, peel both mangoes and remove their pits. Place the fruit flesh into a blender, add 100 ml of water, and blend until completely smooth. Pour the mango puree into a larger saucepan, add the coconut milk and honey, then bring to a boil over medium heat.
As soon as the mixture starts to boil, reduce the heat to low. Add the swollen gelatin along with the water, and heat for 1-2 minutes, stirring constantly, until the gelatin is completely dissolved. Make sure not to boil it further!
Chef's tip
Before serving, let the pudding sit at room temperature for at least 1 hour – this will make its flavors more intense and its texture silkier. You can also garnish each portion with fresh mint.
