Preparing the dough
In a bowl, mix the dry ingredients: spelt flour, ground walnuts, baking soda, and the fragrant spices (cinnamon, cloves, ginger, cardamom).
Add the softened butter, honey, cane sugar, and eggs. Knead into a smooth, uniform dough. If it's too sticky, add a little more flour.
Wrap the dough in aluminum foil and let it rest in the refrigerator for at least 2 hours, but ideally overnight. This will allow the flavors to deepen!
Chef's tip
The gingerbread will keep for weeks in an airtight container, and will become even softer over time.
