Preparation method
Preheat the oven to 180 °C and line a small baking dish (approx. 15 cm × 15 cm) with baking paper.
In a medium bowl, mix the flour, baking powder, cardamom, and a pinch of salt. Add the kefir, egg white, rapeseed oil, finely grated lemon zest, 2 tablespoons of water, and vanilla extract, then thoroughly combine the batter.
Pour the mixture into the prepared dish and bake at 170–180 °C for approximately 30–35 minutes.
Chef's tip
Before serving, you can garnish the cake with fresh, finely chopped mint for an even fresher taste.
