Preparation of the Base and Cream
Grind the biscuits or break them into small pieces using a rolling pin. Melt 30 g of butter and mix thoroughly with the biscuit crumbs.
For the cream, all ingredients must be cold. Whip the fresh goat cheese together with the cream cheese and sifted powdered sugar until fluffy (approx. 2 minutes). Pour in a portion of the cream (100 ml) and continue whipping until the cream thickens (this also takes approx. 2 minutes). If you don't like goat cheese, you can omit it and replace it with more cream cheese.
Preparation of the Salted Caramel
In a thick-bottomed saucepan, melt the remaining 25 g of butter over low heat. Add the brown sugar and melt it, stirring occasionally, for about 3 minutes. Pour in the remaining 90 ml of cream and cook over low heat, stirring continuously, until the caramel begins to thicken and slightly reduces. Finally, stir in the sea salt.
