- 400 g white spelt fine flour
- 2 pcs M-sized eggs
- 30 g liquid honey
- 30 g vanilla whey protein powder
- 300 g lean cottage cheese
- 80 ml rapeseed oil
- 220 ml sparkling mineral water
Preheat the oven to 180 °C and line a high-sided baking pan (approx. 25 cm × 25 cm) with parchment paper.
Sift the spelt flour into a large bowl, add the eggs, honey, vanilla protein powder, sparkling water, and rapeseed oil. Mix with a kitchen robot or a hand whisk until a smooth, slightly runny batter forms. Pour the mixture into the prepared baking pan and bake at 180–185 °C for 50–55 minutes.
After baking, leave the cake in the pan for 5 minutes, then remove it and let it cool for at least 30 minutes. Finally, spread the cottage cheese evenly on top. Slice and serve.
Chef's tip
You can flavor the cottage cheese with a little lemon zest or vanilla extract for an even richer taste.
