Preparation method

Preparing the sponge

Preheat the oven to 170 °C and line a baking sheet (approx. 40x30 cm) with baking paper. Put the spinach in a blender, add the oil, milk, and lemon juice, and blend into a smooth puree.

Beat the eggs with the sugar until pale and very fluffy (this will take several minutes). Once the egg mixture is ready, quickly stir in the spinach mixture. Mix the flour with the baking powder and salt, then gently fold it into the egg mixture using a spatula with upward motions from the bottom.

Pour the batter into the prepared baking sheet, smooth it out, and bake in the preheated oven for about 20 minutes, or until the top is lightly golden brown. Immediately after removing, turn the sponge onto a clean kitchen towel. Carefully peel off the baking paper. Roll up the hot sponge together with the kitchen towel starting from the shorter side, and let it cool completely.

Chef's tip

The taste of spinach is not noticeable in the sponge at all; it only provides the beautiful green color. It is important to thoroughly blend the spinach with the oil and milk.

Use a creamier curd cheese for the filling to make the cream truly silky.
