Peel the fresh mango and cut it into smaller pieces. Let the frozen mango thaw slightly until soft.
Place the mango pieces in a bowl and blend with an immersion blender until completely smooth. For a perfectly silky texture, pass the mixture through a fine sieve to remove any fibrous bits.
Pour the puree into a saucepan, add the honey and lemon juice. Heat over low heat just enough for the honey to completely dissolve and mix with the fruit.
