Preparation method
Place the coconut milk in the refrigerator overnight (or for at least 8 hours). Then, carefully open it and spoon the thick coconut cream that has collected on top into a bowl. Pour the remaining watery part (approx. 300 ml) from the can into a jar of at least 800 ml.
Add the milk, chia seeds, cocoa powder, honey, and cinnamon to the jar. Close the jar and shake thoroughly. Place both the jar and the separated coconut cream in the refrigerator to chill for at least 4 hours.
Once the chia pudding has thickened, prepare 3 glasses (approx. 250 ml each). Divide half of the chia pudding among them, then layer with 250 g of plain yogurt, and finally one-third of the strawberries and blueberries. Repeat the layering with the remaining pudding, the remaining yogurt, and the next third of the fruits (set aside the last third for garnish).
Chef's tip
To whip coconut cream, it is important that the coconut milk is truly cold and that a high-fat version is used.
If you want a vegan version, use plant-based yogurt and maple syrup instead of honey.
