Látványos és elképesztően szaftos hétvégi brunch fogás: sütőben sült, reszelt trappista sajttal pirult pihe-puha tojáslepény, gazdag zöldhagymás-kápiás túrókrémmel megtöltve és feltekerve.

Preparing and baking the egg sheet
Preheat the oven to 180 °C (conventional top and bottom heat). Line an approx. 25x35 cm baking tray with parchment paper and grease it lightly with 15 g butter so the baked egg sheet will release easily.
In a bowl, beat the 6 eggs thoroughly with 1 pinch fine salt and 1 pinch ground black pepper. Stir in half of the 150 g grated Trappist cheese.
Pour the egg mixture into the prepared baking tray, spread it evenly, and sprinkle with the remaining grated Trappist cheese. Place it in the oven and bake for 12-15 minutes until the egg sheet is set and the cheese is golden brown. Then remove and let it cool until lukewarm.
Chef's tip
The roll is delicious served both warm and chilled: when cold, it can be sliced even more cleanly, making it perfect to prepare the evening before for a leisurely brunch the next day.
If you prefer a more seasoned flavor, you can also stir a little finely chopped fresh dill or a pinch of smoked paprika into the curd cheese spread.
