A békebeli túrófelfújt a monarchia korabeli polgári reggelik legfinomabb öröksége: kívül aranybarnára sült, belül habkönnyű és krémes. A friss bio citromhéj, az aranymazsola és a finom búzadara tökéletes harmóniát alkot az áttört tehéntúróval, amit tálaláskor a vaníliás hideg tejföl tesz ellenállhatatlan őszi brunch-fogássá.

Preparation method

Preparation

1

Preheat the oven to 170 °C (conventional top and bottom heat). Lightly grease a medium-sized ceramic or Pyrex baking dish with a little softened butter, then coat it evenly with breadcrumbs so that the soufflé does not stick and gets a nice golden-brown crust.

2

Separate the eggs into yolks and whites. In a spacious bowl, mash the curd cheese with a fork or potato masher until it is pleasantly creamy yet still rustic and textured. Rinse the raisins in lukewarm water, then drain thoroughly.

Assembling and baking the soufflé

1

Beat the egg yolks with the softened butter and half of the granulated sugar (approx. 40 g) until frothy. Add the grated organic lemon zest, semolina, raisins, and curd cheese. Mix thoroughly, then let it rest for 10 minutes so the semolina can absorb moisture.

Chef's tip

If you want a truly silky result, let the mixture rest for 10-15 minutes after adding the semolina: the semolina will swell, making the soufflé both structurally stable and light as a feather.

To enhance the autumn vibe, you can also soak the raisins for a few minutes in a little lukewarm apple or orange juice for an even fruitier flavor.
