Preparation method
First, prepare the sweet potato: peel it and cut it into cubes of approx. 2x2 cm. Place it in a pot, cover with water, and bring to a boil. Once boiled, reduce the heat to medium and cook for 15-17 minutes until completely soft.
While the potato is cooking, roughly chop the dark chocolate. Preheat the oven to 180 °C. Prepare an approx. 15x20 cm baking dish and line it with baking paper.
Drain the softened sweet potato and mash it thoroughly with a fork until pureed. In a medium bowl, mix the puree with honey, liquid coconut oil, and eggs.
Chef's tip
The brownie is best when completely cooled, as this is when it achieves its perfect, moist texture. It can also be served with a few fresh berries.
