Kifli Kukták
Kívül aranybarna és szuper ropogós, belül ellenállhatatlanul krémes, folyós sárgájú rántott lágytojás, selymes fokhagymás-kapros tejfölágyon és friss kovászos kenyérrel tálalva. A legfinomabb modern magyaros brunch recept hétvégi reggelikre.
Preparation method
Preparing the soft-boiled eggs
Bring water with a pinch of salt to a boil in a medium saucepan. When the water is at a rolling boil, gently lower 4 fridge-cold eggs into it using a spoon.
Cook the eggs for exactly 6 minutes so that the whites set, but the yolks remain perfectly creamy and runny. Meanwhile, prepare a bowl of ice water.
Once the cooking time is up, transfer the eggs immediately into the ice bath and let them cool completely for 5 minutes. Then gently tap the shells and peel them with delicate movements.
Chef's tip
Peeling the soft-boiled eggs is the most delicate step: the ice water bath helps separate the membrane from the shell. Peeling them submerged under water makes the shell slide off much easier without damage.
Do not fry the eggs for too long in the hot oil, otherwise the yolk inside will set. Quick frying at high heat is the secret to a golden-brown crispy crust and a runny interior.
