Az igazi, aranybarnára sült nagyi-féle túrós batyu semmihez sem fogható illattal tölti be a konyhát egy ráérős reggelen. Preparation method
Activating the yeast and kneading the dough
Warm the milk in a small saucepan. Add 1 tablespoon (approx. 15 g) of the measured granulated sugar, crumble in the yeast, and leave it in a warm place to activate for 8-10 minutes, until a nice foamy layer forms on top.
Sift the fine wheat flour into a spacious mixing bowl and mix with the salt and the remaining granulated sugar for the dough (approx. 15 g). Make a well in the center, pour in the activated yeast milk, crack in 1 whole egg, and finally add the melted, but not hot, butter.
Knead the dough thoroughly by hand or with a stand mixer for about 8-10 minutes, until you get a smooth, elastic loaf of dough that easily pulls away from the sides of the bowl.
Chef's tip
The small amount of semolina added to the curd cheese filling is key: it absorbs the moisture released during baking, so the pastry does not get soggy and the filling stays pleasantly smooth and creamy.
Pinch the corners of the bundles together firmly and twist the knot slightly so they won't pop open in the oven from the steam.
