Preparing the eggs and making the filling
Place the eggs in a saucepan, pour enough cold water over them to cover them completely, and boil for exactly 9-10 minutes from boiling until hard-boiled. Then cool immediately in cold water and carefully peel them.
Cut the peeled hard-boiled eggs in half lengthwise. Gently scoop the yolks out into a bowl and set the whites aside for serving.
Add the room-temperature softened butter, 1 tablespoon of mustard, 1 tablespoon of sour cream, a little salt, and freshly ground black pepper to the yolks. Mix with a fork or hand whisk into a silky, smooth cream.
Chef's tip
For a perfectly smooth and lump-free filling, pass the yolks through a fine-mesh sieve before beating them with the butter.
You can also prepare this the evening before: covered in the refrigerator, the flavors will meld together, so the next morning all you need to do is serve it alongside fresh kifli.
