Preheat the oven to 185–190 °C. Prepare a large, oven-safe pan.

Wash the leek thoroughly and cut it into fine rings. Peel the garlic and slice it thinly.

Heat the olive oil in the pan over medium heat. Add the leek, garlic slices, butter, and dried thyme. Sauté over medium heat for 5–6 minutes until the onion softens.

The frittata is also excellent cold, making it perfect for a snack or afternoon meal the next day.
