Preheat the oven to 180 °C (top and bottom heat). Wash the apples thoroughly and pat them dry. Using a melon baller or a small sharp knife, carefully remove the apple cores from the stem side, making sure the bottom remains intact and is not pierced through.
Roughly chop the walnuts (or grind half of them and leave the other half finely chopped for a crunchy texture). In a small bowl, mix the walnuts with the raisins, honey, vanilla sugar, and ground cinnamon.
Place the prepared apples upright in a buttered or parchment paper-lined baking dish. Divide the spiced walnut filling evenly among the apple cavities, pressing down slightly, then top each apple with a knob of butter (approx. 10 g butter per apple).
Chef's tip
Choose a firm-fleshed, slightly tart autumn apple variety (such as Idared, Jonagold, or Boskoop), as these hold their shape nicely during baking and complement the sweet honey perfectly.
For an adult version, you can pre-soak the raisins in 1-2 tablespoons of rum or Tokaji Aszú for 15 minutes for an even richer festive aroma.
