Preparation method

Ingredients overview

  • 100 g shredded coconut
  • 25 g coconut oil
  • 40 g honey
  • 80 g dark chocolate (70%)

Prepare a food processor or blender. Add the shredded coconut, 20 g coconut oil, and honey, then blend until the ingredients are fully combined. Then, take out ice cube trays and firmly press the mixture into the cavities. Place in the freezer for at least 30 minutes to set.

Once the coconut mixture has solidified, prepare the chocolate coating over a double boiler. Boil a small amount of water in a saucepan, then place a heatproof bowl over it, ensuring it does not touch the water. Break the dark chocolate into the bowl and add the remaining 5 g of coconut oil. Melt the chocolate over low heat, stirring constantly, until smooth and shiny (this takes approximately 3-4 minutes).

Remove the coconut cubes from the freezer, pop them out of the mold, and using a fork, dip each one into the melted chocolate. Place them on baking paper, let them set for 1-2 minutes, then serve. Stored in the refrigerator, they will stay fresh for days.

Chef's tip

If you don't have an ice cube tray, you can hand-form small balls or rectangles from the mixture before placing them in the freezer.
