Preparation method
Melt the chocolate and butter in a bowl over a bain-marie, then let it cool slightly. Blend the sugar with the fresh lemon balm leaves until you get a fine aromatic mixture.
Place the lemon balm sugar in a bowl, add the eggs, and whisk until light and frothy. It's important that the eggs are not cold, otherwise the chocolate butter might curdle. Gently fold in the melted chocolate and butter with a hand whisk.
Finally, gently fold in the sifted flour with a spatula. Grease the baking molds with butter, and you can line the sides with baking paper for easier removal. Divide the mixture among the molds, leaving about 1 cm below the rim.
