Preparation method
Ingredients overview
- 700 g watermelon (cleaned weight)
- 350 g Cantaloupe melon (cleaned weight)
- 120 g cucumber
- 200 g feta cheese
- 1 tablespoon olive oil
- juice of half a lemon
- 1 handful fresh mint
- 1 pinch salt
- freshly ground black pepper
Cut both types of melon into cubes. Peel the cucumber, cut it in half lengthwise, scoop out the seedy core, then slice it. Put everything into a large bowl.
Also cube the feta cheese and add it to the melon and cucumber.
Add the olive oil, lemon juice, salt, pepper, and finely chopped fresh mint. Gently toss together and chill well before serving.
Chef's tip
Assemble the salad just before serving so that the melon doesn't release too much liquid.
It will be even more special if you drizzle it with a little balsamic glaze.
