
Refreshing Lentil Salad with Carrots and Gherkins

Preparation method
Place the lentils in a pot, pour in 300 ml of water, and bring to a boil over high heat. Once the water starts boiling, salt it, reduce the heat to medium, cover the pot, and cook the lentils for 13–15 minutes until tender but not falling apart.
Meanwhile, prepare the other ingredients: peel the carrot and cut it into small cubes (about the size of lentils). Peel the onion and finely chop it along with the gherkins. Also, chop the parsley.
In a medium bowl, combine the chopped carrot, onion, and gherkins. Once the lentils are cooked, rinse them with cold water and add them to the vegetables in the bowl.
Chef's tip
The salad is even tastier if you let it rest in the refrigerator for an hour before serving, allowing the flavors to meld.
