Prepare the bulgur according to the instructions on the package.

Cut the avocado in half along the pit, then twist the two halves apart. Remove the pit, scoop out the flesh from the peel with a spoon, and cut it into cubes.

Cut the cooked beetroot and cucumber into small cubes, and quarter the cherry tomatoes.

Chef's tip

You can drizzle the salad with a little extra virgin olive oil and fresh lemon juice for an even fresher taste.
