- 500 g canned chickpeas
- 300 g ricotta
- 100 g feta cheese
- 1 pc shallot
- 1 handful fresh parsley
- 1 tablespoon nutritional yeast
Pantry staples

Drain and thoroughly rinse the chickpeas. Finely grate the shallot and feta cheese, then add them to the chickpeas.

Roughly chop the fresh parsley and mix it into the salad along with the ricotta, nutritional yeast, salt, and pepper.

For the flavors to meld perfectly, it's worth chilling the salad for a short time before serving. You can serve it on its own or with fresh baked goods.
Chef's tip
If you want an even creamier texture, mash a portion of the chickpeas with a fork before mixing.
