Preparation method
Cut the bell pepper, red onion, and tomato into small, even cubes, and crush or finely chop the garlic. Place all vegetables in a large salad bowl.
In a small bowl, mix the olive oil and red wine vinegar until you get a uniform dressing. Pour the dressing over the vegetables and toss thoroughly.
Add the fresh oregano, then season with salt and freshly ground black pepper to taste.
Chef's tip
The salad is even tastier if you let it sit in the refrigerator for 15-30 minutes before serving, allowing the vegetables to absorb the flavors of the dressing well.
