Preparing the salad
Cut the tomatoes according to their size: halve smaller ones (e.g., cherry tomatoes), and cut larger ones into quarters, wedges, or slices.
Slice the red onion very finely, rinse it in ice-cold water, then let it drain thoroughly. Roughly chop the parsley.
In a bowl, combine the chopped tomatoes, drained onion, parsley, and salt.
Chef's tip
The prepared dressing can be stored in the refrigerator in a sealed container for up to a week.
You can dip the sliced onion in hot water for 5 seconds, then immediately place it in ice water. This way, it loses its pungency but retains its crispness.
