Preparation
Cut the romaine lettuce into smaller pieces. Dice the cucumber and radishes finely. Finely chop the spring onions, parsley, and mint. Place all chopped ingredients into a large bowl.
Preparing the pita
Preheat the oven to 200 °C and line a baking tray with parchment paper. Cut the pita bread in half lengthwise, then cut it into small cubes, about 1x1 cm. Spread the pita cubes on the baking tray and bake for 4-5 minutes at 190-200 °C. Then stir them and bake for another 4-5 minutes until golden brown and crispy.
Dressing and serving
While the pita is baking, prepare the dressing: in a sealable jar, shake together the olive oil, lemon juice, honey, and salt until thoroughly combined. Pour the mixture over the vegetables and toss well.
Chef's tip
You can also toast the pita in a pan with a little olive oil if you don't want to turn on the oven.
