Preparation method
Mix the coconut milk with the cane sugar and agar-agar in a saucepan.
Cut the vanilla bean in half lengthwise, scrape out the seeds, then add both the seeds and the bean to the coconut milk. Bring the mixture to a boil. As soon as it starts boiling, turn off the heat and let it stand for 20 minutes for the vanilla aroma to infuse the milk. Then stir in the lime juice, remove the vanilla bean, and pour the liquid into glasses. Let it cool and set.
Halve the apricots and place them cut-side down in a pan. Add the star anise and sprinkle with granulated sugar.
