
Plum friand cake with forest fruits

Preparation method
Preheat the oven to 180 °C. Prepare a baking dish of approx. 20 cm × 30 cm and line it with baking paper.
Prepare the filling: Wash the plums, pit them, and cut them into sixths. Place them in a bowl, add the frozen forest fruits and ground cinnamon. Mix thoroughly, then set aside.
Prepare the dough: Separate the 5 eggs. Place the yolks in a medium bowl and the whites in a high-sided mixing bowl. Add 60 g of brown cane sugar to the yolks and beat until frothy. Beat the whites until almost stiff, then add the remaining 30 g of sugar and continue beating until you get a shiny and stiff foam.
Chef's tip
The cake can also be served with a scoop of vanilla ice cream or a little Greek yogurt for an even creamier experience.
