Ingredients
- 400 g all-purpose flour
- 500 ml milk
- 80 g granulated sugar
- 30 g fresh yeast
- 4 pcs eggs
- 1 pinch salt
- 30 g butter for frying
- 2-3 tbsp rum (or rum essence)
- 150 g powdered sugar for sprinkling
- 1 tsp ground cinnamon
Steps
- 1Crumble the yeast into the lukewarm milk. Add the flour, sugar, eggs, and a pinch of salt, then mix into a smooth, thin batter. Cover and let it rise in a warm place for about 40 minutes, or until it doubles in size. After rising, do not stir the batter to prevent it from deflating.
- 2Heat a pan over medium heat and grease it with a little butter. Spoon small dollops of the batter into the hot pan, shaping them into round pancakes. Fry both sides until golden brown.
- 3Melt the butter for serving with the rum (or rum essence). In a small bowl, mix the two types of sugar with the ground cinnamon. Brush the still hot pancakes with the rum butter, then roll them in the cinnamon sugar.
- 4Tip: You can also fry the pancakes in a special fried egg mold for a nice, regular shape. When serving, you can offer a spoonful of sour cream, fresh blueberries, or other berries. Plum jam and grated cottage cheese also pair excellently with them.
