Crack the 10 eggs into a large bowl, add the granulated sugar, vanilla sugar, and a pinch of salt. Mix gently with a hand whisk, but do not whisk until frothy, so that the curd remains nicely homogeneous and silky.
Pour the milk into a thick-bottomed saucepan, add the raisins, then start heating over medium heat until it just begins to simmer.
Cooking and curdling
Reduce the heat to low, then slowly pour the egg mixture into the warm milk in a thin stream while gently stirring continuously with a wooden spoon.
Chef's tip
Kept in the refrigerator in an airtight container, the sárgatúró will remain fresh and perfectly sliceable for 3-4 days.
If you prefer it less sweet, you can halve the amount of granulated sugar, or make a savory version with finely chopped fresh chives and spring onions.
