Preparing the batter
In a bowl, mix the eggs with a pinch of fine salt and half of the milk. Gradually add the sifted all-purpose flour and whisk until smooth and lump-free.
Pour in the remaining milk, the soda water, and 15 ml of sunflower oil (use the rest for frying). Mix into a smooth pancake batter, then let it rest in the refrigerator for 20 minutes.
Cooking the cinnamon plum filling
Thoroughly wash the plums, pit them, and cut them into wedges. Wash the lemon, finely grate its zest, and squeeze out 1 tablespoon of juice.
Chef's tip
The soda water keeps the pancake batter especially light and soft. If you are using very sweet plums, you can reduce the amount of granulated sugar to taste.
You can turn it into an even more festive dessert by serving it with a scoop of vanilla ice cream or a sprinkle of toasted walnuts.
