Wash the plums thoroughly, cut them in half, and remove the stones. Wash the orange with warm water, peel 3-4 wide strips of zest from it (without the bitter white pith), and squeeze its juice.
Cooking and poaching
Pour the dry red wine, freshly squeezed orange juice, orange peel strips, granulated sugar, cinnamon sticks, and whole cloves into a medium saucepan. Heat over medium heat until the sugar has completely dissolved, then boil for 2-3 minutes to release the aromas.
Place the halved plums cut-side down into the hot spiced wine. Turn the heat down to low and gently simmer the fruit for 8-10 minutes until tender, but still holding its shape.
Chef's tip
This dessert can also be prepared ahead of time: the wine-poached plums will keep in the refrigerator for 2-3 days, and the flavours will meld together even better. They can be enjoyed cold or slightly rewarmed before serving.
Instead of whipped cream, it also pairs wonderfully with a scoop of premium vanilla ice cream or mascarpone cream.
