PREPARING THE DOUGH
For the dough, heat 140 g butter, sugar, and honey over a bain-marie for about 2 minutes, until they are completely melted and uniform. Make sure the bottom of the bowl does not touch the water.
Once the ingredients are well combined, add the eggs while continuously stirring.
Remove from heat and gradually mix in the flour combined with 20 g cocoa powder and baking soda. First, use a hand whisk, then when the dough becomes too thick, knead it smooth by hand on the work surface.
Chef's tip
You can make the cake even juicier by drizzling the layers with a little plum compote juice (which can also be spiced up with a little rum) before applying the cream.
