Preparing the dough
In a large bowl, mix the flour with the baking powder, salt, and powdered sugar. Add the cold, diced butter and quickly rub it into the flour with your fingertips or in a food processor until it reaches a sandy consistency.
Add 1 egg and the sour cream to the crumbly flour mixture. Knead it quickly into a smooth, pliable dough, taking care not to melt the butter with the warmth of your hands.
Divide the dough into two portions (roughly a two-thirds and one-third ratio). Wrap both portions and place them in the refrigerator to rest for at least 30 minutes.
Chef's tip
If the pears are very juicy, gently press out the excess liquid in a sieve after simmering before spreading onto the dough.
Instead of semolina, you can also sprinkle finely ground walnuts over the bottom dough base, which gives the pastry an even richer autumn flavor.
