Wash the pears thoroughly, peel them, and cut them into rounds about 1 centimetre thick. Remove the core from the centre of the rounds using a cutter or a small knife.
In a deep mixing bowl, whisk the eggs until smooth with the granulated sugar, vanilla sugar, and a pinch of fine salt.
Add the milk, then gradually fold in the plain wheat flour mixed with the baking powder. Whisk until lump-free with a hand whisk - you should get a creamy batter thicker than pancake batter that coats the fruit nicely.
Chef's tip
Tip for crispiness: Use ripe but still firm pears (such as Abate Fetel or Bosc), so the slices hold together nicely during frying, keeping the batter crispy while the inside becomes pleasantly silky and juicy.
Serving idea: A scoop of vanilla ice cream or a little warm vanilla custard goes wonderfully with the cinnamon pear fritters, making this nostalgic autumn dessert even richer.
