Ingredients overview
- 500 g fresh strawberries
- 250 g full-fat cottage cheese
- 200 ml cooking cream (15%)
- 100 ml whole milk
- 30 g powdered sugar
- 10 g lime juice
- 10 g pistachios
- 2 sprigs fresh lemon balm or mint
Wash the strawberries thoroughly and remove their stems. Set aside a few nice ones for decoration.
Place the strawberries in a high-sided bowl. Add the cottage cheese, cooking cream, milk, powdered sugar, and lime juice, then blend with an immersion blender until completely smooth and creamy.
Serve the prepared cream in bowls or deep plates. Garnish with the reserved strawberry slices, coarsely chopped pistachios, and fresh lemon balm or mint leaves. It can be consumed immediately, but it's even more refreshing when chilled.
Chef's tip
If you desire an even creamier consistency, you can press the cottage cheese through a sieve before serving.
